- 1/4 cup honey
- 1/2 cup apple juice
- 6 cups chopped rhubarb
- two thin slices of beets (optional)
- Mix apple juice and honey in large pot. Heat until honey dissolves into the apple juice.
- Add rhubarb and beets if using. Simmer for 8-10 minutes or until the rhubarb become mushy. Stir occasionally. Remove beets (they are only for color).
- Use on toast, yogurt, over ice cream, or eat it plain!
