Rhubarb Compote


  • 1/4 cup honey
  • 1/2 cup apple juice
  • 6 cups chopped rhubarb
  • two thin slices of beets (optional)
  1. Mix apple juice and honey in large pot. Heat until honey dissolves into the apple juice.
  2. Add rhubarb and beets if using. Simmer for 8-10 minutes or until the rhubarb become mushy. Stir occasionally. Remove beets (they are only for color).
  3.  Use on toast, yogurt, over ice cream, or eat it plain!
