Refrigerator Pickles

Jar stuff with cucumbers!

  • 3 cloves garlic, peeled
  • 1 tsp kosher salt
  • 2 tbsp mustard seed
  • 2 tbsp dill seed
  • 1 tbsp black peppercorns
  • 1 bay leaf
  • 1 cinnamon stick
  • 1-2 cucumbers OR 2-3 carrots (depending on the size of your jar!)
  • Distilled white vinegar

Place garlic, salt, and spices in jar. Cut cucumbers into spears or carrots into long skinny strips. Stuff the jars with the cucumbers or carrots. Fill jar halfway with distilled white vinegar. Top off jar with water.  Put lid on jar and shake until salt dissolves.

Store jar in refrigerator for at least a week. Pickles will keep for at least 3 weeks.
