- 2 ½ cups corn, fresh or canned
- 2 cups black beans, rinsed
- 8 plum tomatoes, diced
- 6 green onions, minced
- ½ cup cilantro, minced
- Juice of 1 to 2 lemons or limes
- Salt and pepper, to taste
- If using fresh corn, sauté in 1 teaspoon olive oil for 3-5 minutes.
- Combine all ingredients in large bowl.
- Stir to mix thoroughly.
- Enjoy with corn chips, in a burrito, or on its own!
