Black Bean and Corn Salsa

Ingredients

  • 2 ½ cups corn, fresh or canned
  • 2 cups black beans, rinsed
  • 8 plum tomatoes, diced
  • 6 green onions, minced
  • ½ cup cilantro, minced
  • Juice of 1 to 2 lemons or limes
  • Salt and pepper, to taste

Directions

  1. If using fresh corn, sauté in 1 teaspoon olive oil for 3-5 minutes.
  2. Combine all ingredients in large bowl.
  3. Stir to mix thoroughly.
  4. Enjoy with corn chips, in a burrito, or on its own!
